#2 A typical month: 8-10 days off, 3-4 layovers (24-72 hours, anywhere from Cairo to Auckland), and a handful of turnarounds (Gulf, India, short Europe). Around 80-100 block hours. There's a request system for days off and some destinations but no seniority bidding, a new joiner and a ten-year crew member fly similar mixes. Swaps with colleagues are how you shape a month.

#3 And ultra-long-haul (Auckland, Los Angeles, Buenos Aires) comes with the longer time off after. Some crew chase them for the allowances, some avoid them for the body clock. You'll find your preference in year one.
